01 - Heat a large heavy-bottomed pot or Dutch oven over medium heat. Add ground beef and cook, breaking up with a spoon, until browned. Drain excess fat if needed.
02 - Add diced onion and cook for 3 to 4 minutes until softened. Stir in garlic, red bell pepper, and jalapeño, cooking for an additional 2 to 3 minutes.
03 - Add chili powder, cumin, smoked paprika, cinnamon, oregano, salt, black pepper, and cayenne pepper. Cook for 1 minute until the spices release their aroma.
04 - Stir in the tomato paste and cook for 1 minute, stirring continuously.
05 - Pour in diced tomatoes with their juice, drained kidney and black beans, cocoa powder, and broth. Stir thoroughly to combine all ingredients.
06 - Bring the mixture to a gentle boil, then reduce heat to low and simmer uncovered for 30 minutes, stirring occasionally.
07 - Stir in cocoa nibs and continue to simmer for an additional 5 minutes. Adjust seasoning to taste.
08 - Ladle the chili into bowls and garnish with fresh cilantro, sour cream or yogurt, shredded cheddar, and sliced green onions as desired.
